Did you know that in the early 1900’s, black entrepreneur Henry Perry coined the local style of Kansas City barbecue? He was also the first person in the city to open a barbecue restaurant and to truly make a living off this craft!

Mrs. Schmitt’s Food Prep Class at Hudson Senior High School has been learning about the history and process of barbeque during National Barbecue Month (May 2024). Mrs. Schmitt’s son, Matt McCauslin, was a special guest chef for the class, demonstrating the art of smoking meat. Matt helped the students prepare pulled chicken sliders with a side of student-made herb garlic butter smothered smoked potatoes. The students were engaged and enthusiastic for the process and enjoyed a tasty meal! #HudsonTogetherWeCan!
